Creamy Homemade Almond Milk

We’re always on the hunt for the most delicious and nutritious food and this organic almond milk recipe definitely makes our short list. It’s relatively easy and requires only a few cooking gadgets to make this possible. The two gadgets necessary to make this recipe are a blender and a nut milk bag (or cheese cloth or even a think clean t-shirt!). The nut milk bag is nothing more than a mesh bag that finely strains out the solids from the liquid. Now, without further ado, here’s Prudence’s homemade almond milk recipe and step by step directions!

NOTE: This almond milk is so fresh and since it’s unpasteurized the shelf life is 3-5 days. For best shelf life pour the almond milk in a mason jar; tighten the lid and place in the fridge.

Ingredients:

Organic, Raw Almonds

Filtered Water

1:3 Almonds to water ratio when blending

1/2 TSP Organic Vanilla Extract

1 pinch salt

1/2 TSP Raw Honey

Soak em’, Soak em’ good

The most important part of making homemade almond milk is sprouting the almonds. We know when you hear sprouting, you’re expecting little sprouts to shoot out of the almonds, however this will not happen! Sprouting simply refers to soaking the almonds in filtered water for at least 24 hours. During the 24 hours, it’s very important to change the water at least three times. This is done by straining the dirty water and then replacing it with fresh water. This will ensure all impurities are removed from the almonds and that they only absorb clean, filtered water. You’ll see an amazing transformation in the almonds as they absorb the clean water, plump up and expel any dirt or impurities.

oh, by the way, sprouted whole almonds also make a great snack!

How to Sprout:

Step 1: Use a large bowl and place 2-3 cups of organic, raw almonds.

Step 2: Then fill the bowl with filtered room temperature water. It’s very important to use filtered water as the almonds will actually absorb the water being used in this process.

Step 3: Let the water and almonds sit for 6 hours.

Step 4: Use a colander to strain and rinse the almonds.

Step 5: Fill the bowl with the rinsed almonds and then fill the bowl with filtered water

Step 6: Repeat steps 3, 4, 5; do this 3-5 times within the first 24 hours.

Blend and Strain!

Once the water is clear, strain and rinse them one last time. Then measure out 1 cup of almonds and toss them in the blender. Then add 3 cups of filtered water. Rev the blender to the top power and blast it for 15-30 seconds. Take a nut milk bag and pour the blended almonds into the bag and strain it out. Depending on your preferences, you can keep it unflavored or add a touch of vanilla extract, sea salt, or raw honey simple syrup.**

At this point you have delicious creamy almond milk!!

**Hey! it’s actually super easy to make honey simple syrup…. simply take a little honey (1/2 tsp) on a spoon and mix it with 1-2oz of hot water (150f).. stir it up until it dissolves and that’s it! Toss it in you almond milk and enjoy!
