Conrad's (almost famous) Gluten Free Turkey Chili
This recipe comes straight from my son, and from what I hear it’s beyond a crowd pleaser and has begun to gain a hot reputation.
With so many of us practicing social distancing by staying inside, it’s important to meal plan properly and make dishes that can last a few days by being both a healthy lunch or dinner. This organic and gluten free chili is the perfect, one pot, any meal solution. We often make this at the beginning of the week and dress it up with different toppings to provide some meal diversity throughout the week.
Ingredients:
1 lb Organic Ground Turkey
2 Cans Diced Tomatoes (Make sure they’re diced!)
1 Packet chili/taco seasoning
3-5 Cloves Garlic
1 Can Chipotle Peppers in Adobo Sauce
3 Cans Beans (White Navy, Black, Kidney are our favorites)
1 Yellow Onion
2-3 Squares Unsweetened Dark (this is the secret ingredient :))
1 bell pepper
Toppers: Avocado, Tomato, Onion, Cilantro, Goat Cheese, Roasted Sweet Potatoes, Fresh Kale
Chili Base
Chili is a rather easy dish to make, but can be tough to perfect. Making chili is all about layering in the flavors at each step. To do this, the onions, garlic, and chipotle peppers provide the foundation for all the other flavors to be layered on top. To start, dice a whole white onion, 3-5 garlic cloves and sauté it on medium heat until browning occurs. Once browning occurs, add the chili/taco seasoning and then open a can of chipotle peppers and dump it out on a cutting board. Take a big knife and chop it up so it turns into a smooth paste and toss it into the pot with the sautéed onions and garlic. How much chipotle you use depends on how much you like spice. We love spicy and use 3/4 of the can.
After the peppers are added, give it a good stir then immediately add the ground turkey meat to the pot and cook it for 10 about minutes until the majority of the pink color is cooked out. At this point all the flavors from the peppers, onion and garlic are infusing the meat with spice and savory notes that will sing through to the end.
Finishing Touches
Once you have the chili base made and the turkey is just about fully cooked, go ahead and add the other ingredients starting with the diced tomatoes. Toss both cans of tomatoes into the pot, give it a good couple stirs and cook it for about 10 minutes or until you start seeing bubbles on top. Once the tomatoes are cooked add the beans, followed by the dark chocolate, and bell peppers. Cook it up for 15-20 more minutes until it’s all a hot temperature. And that’s it! Top it with your favorite toppings and enjoy. Are favorites toppings are goat cheese, cilantro, avocado and roasted sweet potatoes ☺️.
